11 Pinos Bobal 2022 Old Vineyard

Description
Wine made from the best Bobal grapes from the Tolosa Family. Organic, Vegan. A red wine with a great colour and a personal style with a toast notes.

Tasting notes
Appearance: Cherry red with violet aftertones, lively, clean, bright, medium depth intensity. Bouquet: Black fruit, cherry, redcurrants, together with strong mineral character stand out. Subtle balsamic and spicy nuances are also present. Palate: Fresh, fleshy, with intensity. Noble tannin which adds structure, but quite polished.
Acidity which adds character and allows us to enjoy a long lingering finish wine.

Wine Elaboration

Once the malolactic fermentation is completed, the barrels are filled, all of which are 225 and 300 litre French oak barrels, some new barrels and some second year barrels. After 3 months, the wine is selected from the best barrels, bottled and
returned to the cellar for bottle ageing.
Minimun 6 moths in bottle before market reléase.

Description
The work of the entire year in the field has borne fruit. This wine reflects the personality of La Manchuela through this organic, vegan and signature wine.

Tasting notes
Cherry red colour with violet overtones which characterises a young red wine with 3 months ageing in oak barrels. Aromas of ripe red fruit, forest floor and red pepper. A round, balanced, mineral wine.
Its fresh, balanced acidity makes this wine perfect to be served with everyday meals.

Description
Wine made from the best Chardonnay grapes of the
Tolosa Family. Organic, Vegan and healthy. A fresh
white wine, full-bodied on the palate with a
personal style.

Tasting notes
Attractive pale yellow colour. Stone fruit aromas and
white flower nuances. Unctuous and full-bodied on
the palate, with a balanced acidity and a pleasant
aftertaste making this wine a Chardonnay with plenty of
personality.

Description
Wine made from the best Bobal grapes from the Tolosa Family. Organic,
Vegan. A red wine with a great colour and a personal style with a toast
notes. These old vines produce wines of unique transcendence,
incomparably rich in flavour, symbolism and heritage. Each vine is a
whimsical work of art, wishing to convey that time does matter when
something unique is desired. Slowly over almost eighty years these vines
have been adapting to climate change, without altering their quality one
iota. Cultivated with care throughout the year, these will produce the
best fruit, which once in the winery will be elaborated using the best
technology. Ageing in French oak and another longer period of bottle
ageing, will create a harmonious wine, with personality and hallmark
signature.

Tasting Notes

Cherry red with bright garnet
aftertones. Present on the bouquet is
black fruit which blends with liquorice,
balsamic and vanilla nuances. Fullbodied on the palate, a wine with
smooth tannins which adds a subtle
structure. It is fresh, with good acidity
and an aftertaste where the black fruit
aromas predominate over the
remaining nuances.

Description
Wine made from the best Macebo grapes from the Tolosa
Family. Organic, Vegan and healthy. A fresh white wine, full-
bodied on the palate and having a personal style. Macerated
with the skins 2 months to get a very balanced mouthfeel.

Tasting Notes
Attractive pale orange colour. Stone fruit aromas and white
flower nuances. Unctuous and full-bodied on the palate,
with a balanced acidity and a pleasant
aftertaste make this Orange macabeo a wine with plenty of
personality.

Description
The location of these vineyards is called “Finca Los Halcones”, a unique setting surrounded by pine groves, holm oaks and aromatic plants, nestled in the Cabriel Valley declared a Biosphere Reserve
by UNESCO. In this plot of land there are 12 hectares planted with Sauvignon Blanc grapes, from which are selected 3 hectares
to elaborate the Finca Los Halcones. This selection is due to the fact that the soil is very uneven and the vines have a southern
orientation. These two factors will be fundamental to obtain the highest quality grapes. As the terrain is uneven, the soil is more chalky and less fertile, the result will be a lower production. Insofar as the orientation of the vineyard trellis are concerned, this will depend on the hours of sunshine, in the manner described here,
causing the bunches to be more sun-drenched, preventing fungal diseases and ensuring a perfect ripening. The result is a quality wine with a hallmark signature.

Tasting Notes
Fresh, balanced, elegant, good acidity, somewhat citric, with pineapple and mango nuances. It has a certain unctuousness from ageing on its fine lees.

11 Pinos Extra Virgin Olive Oil

Olive Variety: Picual, Manzanilla y Cornicabra.
Harvest: October 15-30th. by Mechanical vibration with catching nets/cloaks.
Elaboration: Maximum 4 hours from collection. Hammer mill. Decanter and vertical centrifuge.
Storing Stainless steel tanks.

Tasting notes
The olfactory sensations of this juice start with an intense fruity aroma of green olive where its aromatic complexity can hold floral notes such as banana, apple and rhyme.
Undoubtedly, spectacular.
The smooth and delicacy on the palate provokes that all senses open to the explosion of flavors which presents perfectly by combining banana and herbaceous notes. The
bitter and pungent flavors are delicate and balanced in the mouth, characteristic of a sophisticated extra virgin olive oil.
In conclusion, it is an exceptional extra virgin olive oil full of sophistication and delicacy.

ABOUT

The secret of the wines elaborated by Vega Tolosa is their microclimate
and soil. Their production zone is located in the farthest eastern
boundary of La Manchuela, just 120 km from the Mediterranean Sea.

Our vineyards are located between the Júcar and Cabriel river valleys
at height of 750 m: The warm and dry western winds during the day
and the cool and humid eastern winds at night are ideal for the slow
ripening of the grape. Its clayey-calcareus soils also contribute to the
grape’s optimum quality which benefits the drainage of the scarce
rainfall and the conservation of humidity during drought periods.

Hence these conditions facilitate the elaboration of harmonious and
elegant organic wines, with rich sparkling colours, fruity aromas and
a delicious lingering taste on the palate.

 

Bobal

The Bobal variety is now revealing its full potential thanks to a new generation of oenologists in D.O. Manchuela (Cuenca and Albacete). With an emphasis on the old vine stocks of this exclusively local variety,
these young winemakers are producing pleasant, fresh rosés and
some very distinctive reds.
The dichotomous elements of youth and old age synthesize to
bring the Bobal variety to the forefront alongside other great
Spanish varieties.

Bio-diversity

We obtain an increased volume of organic matter through improved composting methods involving the mixture of organic manure and material resulting from pruning and harvesting.

We incorporate the organic production of legumes (lentils, peas, vetch, etc.) as part of our farming method. Our land comprises 400 hectares of organic crops, 150 of which are vineyards.Manure is sourced from organic livestock that is fed with our own produce.

Our soils favor the biological enrichment of microorganisms and insects that in turn attract other animals such as partridges, lizards, etc. Many of these insects find shelter beneath the mulch that is generated by the pruned branches and green manure.
We do not use phosphates, nitrates, or mineral fertilizers. Our fertilizers are made exclusively from bioactive composting, pruning, and organic livestock manure.
